Ingredients

Puff pastry
1 sheet, thawed
Onions
3 large, thinly sliced
Olive oil
2 tablespoons
Heavy cream
1/2 cup
Eggs

Goat cheese
4 ounces, crumbled
Fresh thyme
2 tablespoons, chopped
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the thawed puff pastry sheet on a lightly floured surface to fit a baking sheet. Place the pastry on the baking sheet, pressing it gently into the corners.
  3. In a skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, cooking until caramelized and golden brown, about 15-20 minutes. Stir occasionally to prevent sticking.
  4. Spread the caramelized onions evenly over the puff pastry, leaving a small border around the edges.
  5. In a mixing bowl, whisk together the eggs, heavy cream, chopped thyme, salt, and black pepper until well combined.
  6. Pour the egg mixture over the onions on the puff pastry, ensuring the filling is evenly distributed.
  7. Sprinkle the crumbled goat cheese on top of the tart.
  8. Bake in the preheated oven for 20-25 minutes, or until the tart is golden brown and the filling is set.
