Caramelized Onion and Smoky Gouda Grilled Cheese

Ingredients
- Salt
- 1/2 teaspoon, or to taste
- Black Pepper
- 1/4 teaspoon, or to taste
- Bread
- 4 slices, artisan or whole grain
- Gouda Cheese
- 8 slices, or enough to cover each piece of bread
- Butter
- 2 tablespoons, room temperature
- Onion
- 1 large, thinly sliced
Instructions
- In a medium skillet, heat 1 tablespoon of butter over medium heat until melted.
- Add the thinly sliced onion to the skillet. Cook, stirring occasionally, until the onions are caramelized to a golden brown color, about 10 minutes. Season with salt and pepper to taste.
- Remove the caramelized onions from the skillet and set aside.
- Spread the remaining butter evenly on one side of each bread slice.
- Place two slices of bread, buttered side down, in the skillet. Top each slice with enough Gouda cheese to cover the bread.
- Next, layer the caramelized onions evenly over the cheese on both slices.
- Add another layer of Gouda cheese on top of the onions, followed by the remaining bread slices, buttered side up.
- Cook the sandwiches over medium heat until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
- Remove the sandwiches from the skillet and let them cool for a minute before serving. This allows the cheese to set a little and makes the sandwich easier to cut.
- Cut the sandwiches in half and serve immediately. Enjoy the symphony of flavors!
