Caramelized Onion and Smoky Gouda Grilled Cheese

Ingredients

Salt
1/2 teaspoon, or to taste
Black Pepper
1/4 teaspoon, or to taste
Bread
4 slices, artisan or whole grain
Gouda Cheese
8 slices, or enough to cover each piece of bread
Butter
2 tablespoons, room temperature
Onion
1 large, thinly sliced

Instructions

  1. In a medium skillet, heat 1 tablespoon of butter over medium heat until melted.
  2. Add the thinly sliced onion to the skillet. Cook, stirring occasionally, until the onions are caramelized to a golden brown color, about 10 minutes. Season with salt and pepper to taste.
  3. Remove the caramelized onions from the skillet and set aside.
  4. Spread the remaining butter evenly on one side of each bread slice.
  5. Place two slices of bread, buttered side down, in the skillet. Top each slice with enough Gouda cheese to cover the bread.
  6. Next, layer the caramelized onions evenly over the cheese on both slices.
  7. Add another layer of Gouda cheese on top of the onions, followed by the remaining bread slices, buttered side up.
  8. Cook the sandwiches over medium heat until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
  9. Remove the sandwiches from the skillet and let them cool for a minute before serving. This allows the cheese to set a little and makes the sandwich easier to cut.
  10. Cut the sandwiches in half and serve immediately. Enjoy the symphony of flavors!
