Onion and Gruyere Tart

Experience the sublime blend of sweet, caramelized onions and creamy, melted Gruyere cheese nestled within a golden, flaky puff pastry crust. This Onion and Gruyere Tart is a true homage to the rustic cuisine of the French countryside, offering a savory delight that's perfect as an appetizer or a light main course.

Serves 8

Ingredients

Fresh thyme leaves
1 tablespoon, finely chopped
Salt
to taste
Pepper
to taste
Heavy cream
1/2 cup
Eggs
2, large
Gruyere cheese
1 cup, grated
Olive oil
2 tablespoons
Onions
2 large, thinly sliced
Frozen puff pastry
1 sheet, thawed

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the thawed puff pastry sheet to fit your baking sheet. Transfer the rolled-out pastry to the baking sheet.
  3. Heat the olive oil in a large skillet over medium heat. Add the thinly sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15 minutes. Season with salt and pepper to taste.
  4. Evenly spread the caramelized onions over the puff pastry, leaving a small border around the edges to allow for puffing during baking.
  5. Sprinkle the grated Gruyere cheese over the caramelized onions.
  6. In a small bowl, whisk together the eggs, heavy cream, salt, pepper, and finely chopped thyme leaves until well blended. Pour this mixture evenly over the onions and cheese on the puff pastry.
  7. Bake in the preheated oven for 20-25 minutes, or until the tart is golden brown, the filling is set, and the cheese is bubbling.
  8. Remove the tart from the oven and let it cool for a few minutes before slicing and serving. Enjoy this savory delight warm from the oven for the best flavor.

Tips

  • 💡 For a variation, try adding some cooked and crumbled bacon to the tart before baking. If Gruyere is not available, Emmental or Swiss cheese can make a good substitute. Serve with a crisp, green salad for a complete meal.
