Onion and Lentil Soup

A hearty and nutritious soup made with onions and lentils, perfect for a cold day.

Ingredients

  • Salt and pepper (to taste)
  • Thyme (1 teaspoon)
  • Vegetable broth (4 cups)
  • Green lentils (1 cup)
  • Celery (2 stalks, chopped)
  • Carrots (2, chopped)
  • Garlic (2 cloves, minced)
  • Onions (2 large, chopped)
  • Olive oil (1 tablespoon)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, garlic, carrots, and celery and cook until the vegetables are soft, about 10 minutes.
  3. Add the lentils, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
  4. Use an immersion blender to puree the soup until it reaches your desired consistency, or leave it chunky if you prefer.
  5. Taste and adjust the seasoning as needed. Serve hot.
