
Onion and Lentil Soup
A hearty and nutritious soup made with onions and lentils, perfect for a cold day.
Ingredients
- Salt and pepper (to taste)
- Thyme (1 teaspoon)
- Vegetable broth (4 cups)
- Green lentils (1 cup)
- Celery (2 stalks, chopped)
- Carrots (2, chopped)
- Garlic (2 cloves, minced)
- Onions (2 large, chopped)
- Olive oil (1 tablespoon)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onions, garlic, carrots, and celery and cook until the vegetables are soft, about 10 minutes.
- Add the lentils, vegetable broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Use an immersion blender to puree the soup until it reaches your desired consistency, or leave it chunky if you prefer.
- Taste and adjust the seasoning as needed. Serve hot.
