Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onions and cook, stirring frequently, until they are soft and golden, about 8-10 minutes.
- Stir in the minced garlic, diced carrots, and celery, cooking for an additional 5 minutes until the vegetables begin to soften.
- Add the rinsed lentils, vegetable broth, dried thyme, salt, and black pepper to the pot. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer uncovered for about 30-35 minutes, or until the lentils are tender.
- For a creamy texture, use an immersion blender to puree the soup to your desired consistency, or leave it chunky for a heartier feel.
- Taste the soup and adjust the seasoning with more salt and pepper if needed.
- Ladle the soup into bowls, and garnish with chopped fresh parsley if desired. Serve hot.
Tips
- For added flavor, consider adding a splash of balsamic vinegar or a pinch of smoked paprika.
- You can substitute green lentils with red lentils for a quicker-cooking option, but note that they will create a creamier soup.
- Serve with crusty bread for a complete meal.
