This hearty and flavorful meatloaf combines the rich umami flavors of sautéed onions and mushrooms with tender ground beef. Topped with a tangy ketchup glaze, it’s a classic comfort food that brings warmth to any table. Ingredients

Ground beef
1 1/2 pounds
Onion
1 medium, finely chopped
Mushrooms
1 cup, finely chopped
Breadcrumbs
1 cup
Egg
1, beaten
Worcestershire sauce
2 tablespoons
Ketchup
1/2 cup, plus extra for topping
Garlic powder
1 teaspoon
Dried thyme
1 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Olive oil
1 tablespoon (for sautéing)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, add the olive oil and sauté the chopped onions and mushrooms until softened and aromatic, about 5-7 minutes. Allow to cool slightly.
  3. In a large bowl, combine the ground beef, sautéed onion and mushroom mixture, breadcrumbs, beaten egg, Worcestershire sauce, garlic powder, dried thyme, salt, and black pepper. Mix well until all ingredients are combined, but do not overmix.
  4. Transfer the mixture to a greased loaf pan and shape it into a loaf.
  5. Spread the ketchup evenly over the top of the meatloaf, using a spatula to create an even layer.
  6. Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
  7. Remove from the oven and let the meatloaf rest for 5-10 minutes before slicing to ensure it holds its shape.
