Savory Onion and Mushroom Meatloaf
This hearty and flavorful meatloaf combines the rich umami flavors of sautéed onions and mushrooms with tender ground beef. - 1 medium, finely chopped Onion
- 1 cup, finely chopped Mushrooms
- 1 cup Breadcrumbs
- 1, beaten Egg
- 2 tablespoons Worcestershire sauce
- 1/2 cup, plus extra for topping Ketchup
- 1 teaspoon Garlic powder
- 1 teaspoon Dried thyme
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 tablespoon (for sautéing) Olive oil

Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, add the olive oil and sauté the chopped onions and mushrooms until softened and aromatic, about 5-7 minutes. Allow to cool slightly.
- In a large bowl, combine the ground beef, sautéed onion and mushroom mixture, breadcrumbs, beaten egg, Worcestershire sauce, garlic powder, dried thyme, salt, and black pepper. Mix well until all ingredients are combined, but do not overmix.
- Transfer the mixture to a greased loaf pan and shape it into a loaf.
- Spread the ketchup evenly over the top of the meatloaf, using a spatula to create an even layer.
- Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
- Remove from the oven and let the meatloaf rest for 5-10 minutes before slicing to ensure it holds its shape.
