
Onion and Spinach Stuffed Chicken
This delicious stuffed chicken recipe features a flavorful filling of onions and spinach, wrapped in tender chicken breast.
Ingredients
- Parmesan cheese (1/4 cup, grated)
- Italian seasoning (1 teaspoon)
- Salt and pepper (to taste)
- Olive oil (2 tablespoons)
- Garlic (2 cloves, minced)
- Spinach (2 cups, chopped)
- Onion (1 medium, finely chopped)
- Chicken breasts (4 boneless, skinless)
Instructions
- Preheat the oven to 375°F.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the chopped spinach to the skillet and cook until wilted. Season with salt, pepper, and Italian seasoning.
- Using a sharp knife, make a pocket in each chicken breast by cutting horizontally through the side of the breast, being careful not to cut all the way through.
- Stuff each chicken breast with the cooked onion and spinach mixture, then sprinkle with grated Parmesan cheese.
- Secure the opening of each chicken breast with toothpicks to hold the filling in place.
- Season the stuffed chicken breasts with salt, pepper, and additional Italian seasoning, if desired.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
- Remove the toothpicks before serving.
