- Fresh spinach

- 1/2 cup, grated

- to taste
- Black pepper
- to taste
- Toothpicks
- for securing chicken
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 5 minutes.
- Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season the mixture with salt, pepper, and Italian seasoning, then remove from heat.
- Using a sharp knife, carefully create a pocket in each chicken breast by slicing horizontally through the side without cutting all the way through.
- Generously stuff each chicken breast with the onion and spinach mixture, followed by a sprinkle of grated Parmesan cheese.
- Secure the opening of each stuffed chicken breast with toothpicks to prevent the filling from spilling out during cooking.
- Season the outside of the chicken breasts with salt, pepper, and additional Italian seasoning if desired.
- Place the stuffed chicken breasts in a lightly greased baking dish and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Once baked, carefully remove the toothpicks before serving. Enjoy your delicious onion and spinach stuffed chicken warm!
Tips
- For an added flavor boost, consider marinating the chicken breasts in lemon juice and herbs for 30 minutes before stuffing.
- Feel free to substitute the spinach with other leafy greens such as kale or Swiss chard for a different taste.
- Serve the stuffed chicken with a side of roasted vegetables or a light salad to create a balanced meal.
