Ingredients

Original recipe serves 4

Oil
2 tablespoons (plus more for cooking)
Salt
to taste
Cumin seeds
1 teaspoon
Curry leaves
10-12 leaves
Green chili
1, finely chopped
Onion
1 medium, thinly sliced
Dosa batter
2 cups (store-bought or homemade)
Coconut chutney
for serving
Sambar
for serving

Instructions

  1. In a skillet or pan, heat 2 tablespoons of oil over medium heat.
  2. Add the cumin seeds and let them splutter, releasing their aromatic flavor.
  3. Next, add the sliced onions, finely chopped green chili, and curry leaves. Sauté until the onions turn a beautiful golden brown, about 5-7 minutes.
  4. Sprinkle salt to taste over the sautéed mixture and mix well. Remove from heat and set aside.
  5. Heat a dosa tawa or a non-stick skillet over medium heat. Ensure it's hot enough to sizzle a drop of water.
  6. Pour a ladleful of dosa batter onto the center of the tawa and quickly spread it in a circular motion to form a thin dosa.
  7. Drizzle some oil around the edges of the dosa and on top to help it crisp up.
  8. Spread a spoonful of the sautéed onion mixture evenly on top of the dosa.
  9. Cook until the dosa turns a golden brown and crispy on the bottom, about 3-4 minutes.
  10. Carefully flip the dosa and cook for another minute on the other side until lightly browned.
  11. Remove the dosa from the tawa and serve hot with coconut chutney and sambar.
