Onion Dosa
Onion dosa is a beloved South Indian delicacy that combines the tangy flavor of fermented rice and lentil batter with the sweetness of golden-brown sautéed onions. Ingredients

- 2 cups (store-bought or homemade) Dosa batter

Instructions
- In a skillet or pan, heat 2 tablespoons of oil over medium heat.
- Add the cumin seeds and let them splutter, releasing their aromatic flavor.
- Next, add the sliced onions, finely chopped green chili, and curry leaves. Sauté until the onions turn a beautiful golden brown, about 5-7 minutes.
- Sprinkle salt to taste over the sautéed mixture and mix well. Remove from heat and set aside.
- Heat a dosa tawa or a non-stick skillet over medium heat. Ensure it's hot enough to sizzle a drop of water.
- Pour a ladleful of dosa batter onto the center of the tawa and quickly spread it in a circular motion to form a thin dosa.
- Drizzle some oil around the edges of the dosa and on top to help it crisp up.
- Spread a spoonful of the sautéed onion mixture evenly on top of the dosa.
- Cook until the dosa turns a golden brown and crispy on the bottom, about 3-4 minutes.
- Carefully flip the dosa and cook for another minute on the other side until lightly browned.
- Remove the dosa from the tawa and serve hot with coconut chutney and sambar.

- For a spicier version, add more green chilies or some red chili powder to the onion mixture.
