  • Bell peppers (4 large, halved and seeds removed)
  • Ground beef (1 pound)
  • Onions (1 medium, diced)
  • Cooked rice (1 cup)
  • Tomato sauce (1 cup)
  • Olive oil (2 tablespoons)
  • Garlic powder (1 teaspoon)
  • Salt (1 teaspoon)
  • Black pepper (1/2 teaspoon)
  • Shredded cheese (1 cup (cheddar or mozzarella))

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté until they are softened and translucent, about 5 minutes.
  3. Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks, about 6-8 minutes.
  4. Stir in the cooked rice, tomato sauce, garlic powder, salt, and black pepper. Mix well to combine all ingredients evenly and let simmer for an additional 5 minutes.
  5. Spoon the beef and rice mixture generously into the hollowed-out bell pepper halves, packing them lightly.
  6. Place the stuffed peppers upright in a baking dish and cover the dish with aluminum foil.
  7. Bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and sprinkle the shredded cheese on top of each pepper.
  8. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
