- Bell peppers (4 large, halved and seeds removed)
- Ground beef (1 pound)
- Onions (1 medium, diced)
- Cooked rice (1 cup)
- Tomato sauce (1 cup)
- Olive oil (2 tablespoons)
- Garlic powder (1 teaspoon)
- Salt (1 teaspoon)
- Black pepper (1/2 teaspoon)
- Shredded cheese (1 cup (cheddar or mozzarella))
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté until they are softened and translucent, about 5 minutes.
- Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks, about 6-8 minutes.
- Stir in the cooked rice, tomato sauce, garlic powder, salt, and black pepper. Mix well to combine all ingredients evenly and let simmer for an additional 5 minutes.
- Spoon the beef and rice mixture generously into the hollowed-out bell pepper halves, packing them lightly.
- Place the stuffed peppers upright in a baking dish and cover the dish with aluminum foil.
- Bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and sprinkle the shredded cheese on top of each pepper.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
