Ingredients

Whole oranges
2 medium-sized
Granulated sugar
1 cup (200g)
Almond meal
1 1/2 cups (150g)
Large eggs

Baking powder
1 teaspoon
Vanilla extract
1 teaspoon
Powdered sugar

Butter or non-stick spray
for greasing the cake pan

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round 9-inch cake pan with butter or non-stick spray.
  2. Place the whole oranges in a saucepan and cover them with water. Bring to a boil, then reduce to a simmer for 1 hour, or until the oranges are soft and tender.
  3. Once cooked, remove the oranges from the water and let them cool completely. After cooling, cut the oranges into quarters and remove any seeds.
  4. In a food processor, blend the cooled oranges until smooth, creating a thick puree.
  5. In a large mixing bowl, combine the almond meal, granulated sugar, eggs, baking powder, and vanilla extract. Mix well until fully incorporated.
  6. Add the blended orange puree to the almond mixture and stir until the batter is well combined and smooth.
  7. Pour the batter into the greased cake pan, smoothing the top with a spatula.
