Ingredients
- Whole oranges
- 2 medium-sized
- Granulated sugar
- 1 cup (200g)
- Almond meal
- 1 1/2 cups (150g)
- Large eggs
- 4

- 1 teaspoon
- Vanilla extract
- 1 teaspoon
- Powdered sugar

Instructions
- Preheat the oven to 350°F (175°C) and grease a round 9-inch cake pan with butter or non-stick spray.
- Place the whole oranges in a saucepan and cover them with water. Bring to a boil, then reduce to a simmer for 1 hour, or until the oranges are soft and tender.
- Once cooked, remove the oranges from the water and let them cool completely. After cooling, cut the oranges into quarters and remove any seeds.
- In a food processor, blend the cooled oranges until smooth, creating a thick puree.
- In a large mixing bowl, combine the almond meal, granulated sugar, eggs, baking powder, and vanilla extract. Mix well until fully incorporated.
- Add the blended orange puree to the almond mixture and stir until the batter is well combined and smooth.
- Pour the batter into the greased cake pan, smoothing the top with a spatula.
- Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer it to a wire rack to cool completely.
