Ingredients
- Beets
- 2 medium-sized, roasted and sliced
- Oranges
- 2, segmented
- Mixed greens
- 4 cups
- Red onion
- 1/4 cup, thinly sliced
- Goat cheese
- 1/2 cup, crumbled
- Walnuts
- 1/3 cup, roughly chopped
- Extra virgin olive oil
- 3 tablespoons
- Balsamic vinegar
- 2 tablespoons
- Salt

Instructions
- Preheat the oven to 400°F (200°C).
- Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45 minutes, or until they are tender when pierced with a fork. Allow them to cool, then peel and slice into wedges.
