Servings: 4
Ingredients
- Beets (2 medium-sized, roasted and sliced)
- Oranges (2, segmented)
- Mixed greens (4 cups)
- Red onion (1/4 cup, thinly sliced)
- Goat cheese (1/2 cup, crumbled)
- Walnuts (1/3 cup, roughly chopped)
- Extra virgin olive oil (3 tablespoons)
- Balsamic vinegar (2 tablespoons)
- Salt (to taste)
- Black pepper (to taste)
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45 minutes, or until they are tender when pierced with a fork. Allow them to cool, then peel and slice into wedges.
- In a large salad bowl, combine the mixed greens, roasted beet slices, orange segments, thinly sliced red onion, crumbled goat cheese, and chopped walnuts.
- In a separate small bowl, whisk together the balsamic vinegar, extra virgin olive oil, salt, and black pepper to create a simple vinaigrette.
- Drizzle the dressing over the salad and gently toss to combine all the ingredients without bruising the delicate greens.
- Serve immediately, garnished with additional walnuts and goat cheese if desired. Enjoy the burst of flavors!
