Ingredients

  • Beets (2 medium-sized, roasted and sliced)
  • Oranges (2, segmented)
  • Mixed greens (4 cups)
  • Red onion (1/4 cup, thinly sliced)
  • Goat cheese (1/2 cup, crumbled)
  • Walnuts (1/3 cup, roughly chopped)
  • Extra virgin olive oil (3 tablespoons)
  • Balsamic vinegar (2 tablespoons)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for about 45 minutes, or until they are tender when pierced with a fork. Allow them to cool, then peel and slice into wedges.
