
Orange and Cardamom Muffins
These delicious orange and cardamom muffins are bursting with citrus flavor and a hint of aromatic cardamom.
Ingredients
- Powdered sugar (for dusting)
- Vanilla extract (1 teaspoon)
- Milk (1/2 cup)
- Freshly squeezed orange juice (1/2 cup)
- Orange zest (2 tablespoons)
- Eggs (2)
- Granulated sugar (3/4 cup)
- Unsalted butter (1/2 cup, melted)
- Cardamom (1 teaspoon, ground)
- Salt (1/4 teaspoon)
- Baking powder (2 teaspoons)
- All (purpose flour - 2 cups)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, baking powder, salt, and ground cardamom.
- In a separate bowl, mix together the melted butter and granulated sugar until well combined.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the orange zest, orange juice, milk, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove from the oven and let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
- Once cooled, dust the muffins with powdered sugar before serving.
