Servings: 4

Ingredients

All-purpose flour
2 cups
Baking powder
1 tablespoon
Salt
1/2 teaspoon
Granulated sugar
2 tablespoons
Egg
1
Milk
1 1/2 cups
Fresh orange zest
zest of 1 orange
Poppy seeds
2 tablespoons
Vegetable oil
as needed for greasing
Maple syrup
for serving
Fresh orange slices
for serving

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, lightly beat the egg. Add the milk, fresh orange zest, and poppy seeds. Stir until well combined.
  3. Gradually add the wet ingredients to the dry, stirring gently until just combined. Be careful not to overmix - a few lumps are perfectly fine and ensure your pancakes will be fluffy.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with vegetable oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Allow to cook until bubbles form on the surface, then flip with a spatula and cook for another 1-2 minutes, until golden brown and cooked through.
  6. Repeat with the remaining batter, adding more oil to the skillet as needed.
  7. Serve the pancakes warm, drizzled with maple syrup and adorned with fresh orange slices. Enjoy!
