- All-purpose flour

- Baking powder

- Egg

- Milk
- 1 1/2 cups
- Fresh orange zest
- zest of 1 orange
- Poppy seeds
- 2 tablespoons
- Vegetable oil

- Maple syrup

Instructions
- In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, lightly beat the egg. Add the milk, fresh orange zest, and poppy seeds. Stir until well combined.
- Gradually add the wet ingredients to the dry, stirring gently until just combined. Be careful not to overmix - a few lumps are perfectly fine and ensure your pancakes will be fluffy.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with vegetable oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Allow to cook until bubbles form on the surface, then flip with a spatula and cook for another 1-2 minutes, until golden brown and cooked through.
- Repeat with the remaining batter, adding more oil to the skillet as needed.
