Oregano and Cheese Stuffed Chicken

- 1/2 cup, grated Parmesan cheese
- 1/2 cup, shredded Mozzarella cheese

- 1 teaspoon, dried Oregano

Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, combine the dried oregano, garlic powder, salt, and ground black pepper.
- With a sharp knife, carefully create a pocket in each chicken breast. Start by cutting into the thickest part of the breast, but avoid cutting all the way through to the other side.
- Sprinkle the inside of each chicken pocket with the mixed spices.
- Fill each chicken pocket with equal amounts of shredded mozzarella and grated Parmesan cheese.
- In a large skillet, heat the olive oil over medium-high heat.
- Once the oil is hot, add the stuffed chicken breasts. Cook for about 2-3 minutes on each side, or until they have a nice golden-brown color.
- Transfer the browned chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes. The chicken is done when it's no longer pink inside and the cheese is melted and bubbly.
- Allow the chicken to rest for a few minutes before serving. For a final touch, garnish with fresh oregano leaves if desired.
Tips
- For an even more flavorful dish, you could marinate the chicken in a mixture of olive oil, lemon juice, garlic, and additional oregano for a few hours before stuffing and cooking.
- Feel free to experiment with different types of cheese for the stuffing. Ricotta or gorgonzola could add a nice twist.
