
Oregano and Feta Stuffed Peppers
These delicious stuffed peppers are filled with a flavorful mixture of oregano, feta cheese, and other ingredients.
Ingredients
- Salt and pepper (to taste)
- Garlic (2 cloves, minced)
- Olive oil (2 tablespoons)
- Fresh oregano (2 tablespoons, chopped)
- Red onion (1/2 cup, diced)
- Cherry tomatoes (1 cup, halved)
- Cooked quinoa (1 cup)
- Feta cheese (1 cup, crumbled)
- Bell peppers (4 large)
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a mixing bowl, combine the feta cheese, cooked quinoa, cherry tomatoes, red onion, oregano, olive oil, garlic, salt, and pepper. Mix well.
- Stuff the bell peppers with the feta cheese mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the filling is heated through.
- Serve hot and enjoy!
