Ingredients

Fresh parsley
1/4 cup, chopped
Lemon
1, juiced
Black pepper
1/2 teaspoon, freshly ground
Salt
1 teaspoon
Dried oregano
2 teaspoons
Garlic
4 cloves, minced
Olive oil
1/4 cup
Shrimp
1 pound, peeled and deveined

Instructions

  1. In a medium bowl, whisk together the olive oil, minced garlic, dried oregano, salt, black pepper, lemon juice, and chopped parsley until well combined.
  2. Add the shrimp to the marinade, ensuring each piece is generously coated. Cover and let it marinate for at least 15 minutes at room temperature, or up to 1 hour in the refrigerator for deeper flavor.
  3. Preheat the grill to medium-high heat (about 400°F/200°C).
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking, or feel free to place them directly on the grill grates.
  5. Grill the shrimp for 2-3 minutes per side, or until they are pink, opaque, and slightly charred. Be careful not to overcook them, as they can become rubbery.
  6. Remove the shrimp from the grill and serve immediately, garnished with additional chopped parsley and lemon wedges if desired.
