Oregano and Garlic Grilled Shrimp

Instructions
- In a medium bowl, whisk together the olive oil, minced garlic, dried oregano, salt, black pepper, lemon juice, and chopped parsley until well combined.
- Add the shrimp to the marinade, ensuring each piece is generously coated. Cover and let it marinate for at least 15 minutes at room temperature, or up to 1 hour in the refrigerator for deeper flavor.
- Preheat the grill to medium-high heat (about 400°F/200°C).
- If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking, or feel free to place them directly on the grill grates.
- Grill the shrimp for 2-3 minutes per side, or until they are pink, opaque, and slightly charred. Be careful not to overcook them, as they can become rubbery.
- Remove the shrimp from the grill and serve immediately, garnished with additional chopped parsley and lemon wedges if desired.
