This dish carries the essence of coastal cooking traditions, where seafood and herbs come together to create a delightful dining experience.
Ingredients
- Fresh parsley
- 1/4 cup, chopped
- Lemon
- 1, juiced
- Black pepper
- 1/2 teaspoon, freshly ground
- Salt
- 1 teaspoon
- Dried oregano
- 2 teaspoons
- Garlic
- 4 cloves, minced
- Olive oil
- 1/4 cup
- Shrimp
- 1 pound, peeled and deveined
Instructions
- In a medium bowl, whisk together the olive oil, minced garlic, dried oregano, salt, black pepper, lemon juice, and chopped parsley until well combined.
- Add the shrimp to the marinade, ensuring each piece is generously coated. Cover and let it marinate for at least 15 minutes at room temperature, or up to 1 hour in the refrigerator for deeper flavor.
- Preheat the grill to medium-high heat (about 400°F/200°C).
- If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even cooking, or feel free to place them directly on the grill grates.
- Grill the shrimp for 2-3 minutes per side, or until they are pink, opaque, and slightly charred. Be careful not to overcook them, as they can become rubbery.
- Remove the shrimp from the grill and serve immediately, garnished with additional chopped parsley and lemon wedges if desired.
Tips
- For a spicier kick, add a pinch of red pepper flakes to the marinade.
- These shrimp can also be cooked in a grill pan indoors if the weather doesn't permit outdoor grilling.
- Serve with a side of grilled vegetables or a refreshing cucumber salad to complement the flavors.
