
Oregano and Lemon Roasted Potatoes
These oregano and lemon roasted potatoes are crispy on the outside, tender on the inside, and bursting with flavor.
Ingredients
- Black pepper (1/2 teaspoon)
- Salt (1 teaspoon)
- Garlic powder (1 teaspoon)
- Lemon juice (2 tablespoons)
- Fresh oregano (2 tablespoons, chopped)
- Olive oil (3 tablespoons)
- Potatoes (1.5 lbs, cut into small cubes)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the olive oil, lemon juice, chopped oregano, garlic powder, salt, and black pepper.
- Add the cubed potatoes to the bowl and toss until they are evenly coated with the mixture.
- Spread the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 35-40 minutes, or until the potatoes are golden brown and crispy, stirring once halfway through cooking.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with additional fresh oregano, if desired.
