Servings: 4-6

Ingredients

Potatoes
2 pounds, cubed (yukon gold or red potatoes work well)
Olive oil
1/4 cup
Lemon juice
3 tablespoons, freshly squeezed
Fresh oregano
2 tablespoons, chopped (or 1 tablespoon dried oregano)
Garlic powder
1 teaspoon
Salt
1 teaspoon, or to taste
Black pepper
1/2 teaspoon, or to taste
Additional fresh oregano
for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together the olive oil, freshly squeezed lemon juice, chopped oregano, garlic powder, salt, and black pepper until well combined.
  3. Add the cubed potatoes to the bowl and toss them gently until they are evenly coated with the flavorful mixture.
  4. Spread the seasoned potatoes in a single layer on a large baking sheet, ensuring there's space between them for even roasting.
  5. Roast in the preheated oven for 35-40 minutes, or until golden brown and crispy. Stir the potatoes halfway through cooking to promote even browning.
  6. Once done, remove the potatoes from the oven and let them cool for a few minutes.
  7. Garnish with additional fresh oregano, if desired, before serving.
  8. Serve hot as a delectable side dish, and enjoy the burst of flavors!
