2 pounds, cubed (yukon gold or red potatoes work well)
Olive oil
1/4 cup
Lemon juice
3 tablespoons, freshly squeezed
Fresh oregano
2 tablespoons, chopped (or 1 tablespoon dried oregano)
Garlic powder
1 teaspoon
Salt
1 teaspoon, or to taste
Black pepper
1/2 teaspoon, or to taste
Additional fresh oregano

Instructions
