Servings: 4

Ingredients

Black pepper
1/2 teaspoon, freshly ground
Sea salt
1/2 teaspoon
Extra virgin olive oil
2 tablespoons
Lemon juice
2 tablespoons, freshly squeezed
Lemon zest
1 tablespoon, finely grated
Fresh oregano
2 tablespoons, finely chopped
Salmon fillets
4 (6-ounce) fillets, skin-on

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a small mixing bowl, combine the finely chopped fresh oregano, finely grated lemon zest, freshly squeezed lemon juice, extra virgin olive oil, sea salt, and freshly ground black pepper. Stir until well mixed.
  3. Place the skin-on salmon fillets on the prepared baking sheet with enough space between each fillet.
  4. Use a pastry brush or a spoon to evenly distribute the oregano and lemon mixture over each salmon fillet, ensuring that the top and sides are well coated.
  5. Bake the salmon in the preheated oven for 12-15 minutes, or until the flesh is opaque and flakes easily with a fork. The internal temperature should read 145°F (63°C) on a food thermometer.
  6. Serve the Mediterranean Oregano and Lemon Salmon immediately, garnished with a sprig of fresh oregano and a slice of lemon for a beautiful presentation. It pairs excellently with a side of steamed vegetables or a light, crisp salad.
