- 1 tablespoon, finely grated
- Fresh oregano
- 2 tablespoons, finely chopped
- Salmon fillets
- 4 (6-ounce) fillets, skin-on
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
- In a small mixing bowl, combine the finely chopped fresh oregano, finely grated lemon zest, freshly squeezed lemon juice, extra virgin olive oil, sea salt, and freshly ground black pepper. Stir until well mixed.
- Place the skin-on salmon fillets on the prepared baking sheet with enough space between each fillet.
