Servings: 4
Ingredients
- Zucchini
- 2 medium, sliced into 1/4-inch rounds
- Olive oil
- 3 tablespoons
- Dried oregano
- 1 tablespoon
- Parmesan cheese
- 1/2 cup, grated
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, or to taste
- Fresh parsley
- 2 tablespoons, chopped (for garnish)
Instructions
- Preheat the grill to medium-high heat, ensuring the grates are clean and well-oiled to prevent sticking.
- In a small bowl, whisk together the olive oil, dried oregano, grated Parmesan cheese, salt, and black pepper until well combined to create a flavorful dressing.
- Place the zucchini slices in a large mixing bowl and drizzle the oregano and Parmesan mixture over them. Toss gently to ensure each slice is evenly coated.

- Once done, remove the zucchini from the grill and serve hot, garnished with additional grated Parmesan and freshly chopped parsley for a pop of color and flavor.
