Ingredients
- Garlic powder (1/2 teaspoon)
- Black pepper (1/2 teaspoon)
- Salt (1 teaspoon)
- Parmesan cheese (1/4 cup, grated)
- Dried oregano (1 tablespoon)
- Olive oil (2 tablespoons)
- Chicken (1 whole, about 4 pounds)
Instructions
- Preheat the oven to 425°F (220°C).
- Rinse the chicken and pat it dry with paper towels.
- In a small bowl, mix together the olive oil, dried oregano, Parmesan cheese, salt, black pepper, and garlic powder.
- Rub the mixture all over the chicken, including under the skin and inside the cavity.
- Place the chicken on a roasting pan or baking dish, breast side up.
- Roast the chicken in the preheated oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
