Oreillettes
Oreillettes are a delightful traditional French pastry, cherished especially during the Carnival season. Their name, meaning 'little ears' in French, refers to their crisp, wavy shapes that resemble delicate ears. Light and airy, these pastries are fried to a golden brown and generously dusted with powdered sugar, making them a perfect treat for festive gatherings or a sweet indulgence anytime. Ingredients
- All-purpose flour
- 2 cups
- Granulated sugar
- 1/4 cup
- Salt
- 1/4 teaspoon
- Unsalted butter
- 4 tablespoons, melted
- Eggs
- 2, beaten
- Orange blossom water
- 1 tablespoon
- Vegetable oil
- for frying
- Powdered sugar
- for dusting
Instructions
- In a large bowl, combine the all-purpose flour, granulated sugar, and salt.
- Make a well in the center and add the melted unsalted butter, beaten eggs, and orange blossom water.
- Mix the ingredients together with a wooden spoon or your hands until a dough begins to form.
- Knead the dough on a lightly floured surface for about 5 minutes, until it is smooth and elastic.
- Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 30 minutes at room temperature.
- After resting, roll out the dough on a floured surface to a thickness of about 1/8 inch.
- Cut the rolled dough into rectangles or fun shapes with a pastry cutter or knife.
- In a deep fryer or large pot, heat vegetable oil to 375°F (190°C). Use a thermometer for accuracy.
- Fry the oreillettes in batches, turning them once, until they are golden brown, about 1-2 minutes on each side.
- Remove the fried oreillettes from the oil using a slotted spoon and allow them to drain on paper towels.
- While they are still warm, generously dust the oreillettes with powdered sugar.
Tips
- For an added twist, try infusing the dough with a hint of vanilla extract or a touch of lemon zest for a refreshing flavor.
- Make sure the oil is at the right temperature; too hot and they will burn, too cool and they will absorb too much oil.
