Instructions
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk together the milk, beaten egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.
- Fold in the crushed Oreo cookies until they are evenly distributed throughout the batter.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with additional butter or cooking spray.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes, or until they are golden brown.
- Repeat with the remaining batter, adjusting the heat as needed to prevent burning.
- Serve the Oreo pancakes warm, topped with generous dollops of whipped cream, a drizzle of chocolate syrup, and additional crushed Oreo cookies for garnish.
Tips
- For an extra chocolatey flavor, consider adding a tablespoon of cocoa powder to the dry ingredients.
- If you want to make these pancakes even more decadent, add chocolate chips to the batter along with the crushed Oreos.
- These pancakes freeze well! Simply stack them with parchment paper in between and store them in a zip-top bag for a quick breakfast option.
