Ingredients

Orzo pasta
1 cup
Cucumber
1 medium, diced
Cherry tomatoes
1 cup, halved
Red bell pepper
1, diced
Red onion
1/2, finely chopped
Kalamata olives
1/2 cup, pitted and sliced
Feta cheese
1/2 cup, crumbled
Fresh parsley
1/4 cup, chopped
Olive oil
1/4 cup
Lemon juice
2 tablespoons
Dijon mustard
1 teaspoon
Salt
to taste
Pepper
to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and rinse with cold water to stop the cooking process and cool it down.
  2. In a large mixing bowl, combine the cooled orzo, diced cucumber, halved cherry tomatoes, diced red bell pepper, sliced Kalamata olives, finely chopped red onion, crumbled feta cheese, and chopped fresh parsley.
