Instructions
- In a small cezve (Turkish coffee pot), add 1 cup of water and bring it to a simmer over medium heat.
- Add 2 tablespoons of ground Turkish coffee to the cezve, and stir well to combine with the water.
- If desired, add sugar to taste at this stage for a sweetened coffee.
- Allow the coffee to simmer gently for a few minutes until it starts to foam.
- Remove the cezve from heat and let the foam settle for about 30 seconds.
- Return the cezve to heat and let it simmer again until the foam rises, but do not let it boil over.
- Remove the cezve from heat and pour the coffee into a small espresso cup, leaving the foam and grounds behind.
- Serve hot and savor the rich flavors of the Ottoman Empire espresso, traditionally enjoyed with a side of Turkish delight or a sweet pastry.
