Oysters Rockefeller

Oysters Rockefeller is a true gem of American cuisine, a luxurious dish that combines the briny taste of the sea with a rich and savory topping. The star of this dish is the fresh oysters, which are adorned with a delectable combination of wilted spinach, Parmesan cheese, breadcrumbs, and aromatic garlic, all melted together in butter. This flavorful concoction is then baked until it reaches a golden perfection. Its name, inspired by the richness of the Rockefeller family, truly captures the essence of this dish that's perfect for indulgent celebrations and special occasions.

Serves 4

Ingredients

Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Fresh parsley
2 tablespoons, finely chopped
Parmesan cheese
1/2 cup, grated
Garlic
2 cloves, minced
Unsalted butter
4 tablespoons
Breadcrumbs
1/2 cup
Spinach
2 cups, fresh and finely chopped
Fresh oysters
12, on the half shell

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté until it's fragrant, about 2 minutes.
  3. Add the chopped spinach to the skillet and continue to cook until it's wilted, about 3-4 minutes.
  4. Remove the skillet from the heat. Stir in the breadcrumbs, grated Parmesan cheese, chopped parsley, salt, and black pepper. Mix until the ingredients are thoroughly combined.
  5. Arrange the oysters on a baking sheet. Top each oyster with an equal portion of the spinach mixture.
  6. Bake the oysters for about 10 minutes, or until the topping is golden brown and the oysters are cooked through. Serve immediately while hot.

Tips

  • 💡 Choose large, fresh oysters for this recipe. The larger size will better hold the topping.
  • 💡 If fresh spinach is not available, frozen spinach can be used. Make sure to thoroughly drain and squeeze out any excess water before using.
