Oysters Kilpatrick

Oysters Kilpatrick is an iconic Australian dish that beautifully marries the briny, fresh flavor of oysters with the smoky richness of crispy bacon and a savory Worcestershire sauce. Originating from the 20th century, this dish was named after the Kilpatrick Hotel in Sydney, where it was first popularized. The combination of ingredients creates a mouthwatering experience that is perfect as an appetizer for special occasions or a delightful treat for seafood lovers.

Serves 4

Ingredients

Fresh oysters
12, shucked
Bacon
4 slices, chopped
Unsalted butter
2 tablespoons
Worcestershire sauce
2 tablespoons
Black pepper
to taste
Fresh parsley
2 tablespoons, chopped (for garnish)

Instructions

  1. Preheat your broiler to high.
  2. Carefully shuck the oysters and place them on a baking sheet. Make sure to keep the oyster liquor in the shells.
  3. In a small pan over medium heat, cook the chopped bacon until it's crispy. Remove from heat and drain excess fat.
  4. Add the Worcestershire sauce and unsalted butter to the pan with the bacon. Stir until the butter is completely melted and combined.
  5. Spoon an equal amount of the bacon and sauce mixture over each oyster, ensuring they are well-coated.
  6. Place the oysters under the broiler and cook for about 2-3 minutes, or until the sauce is bubbly and slightly browned. Keep a close eye to prevent burning.
  7. Remove from the oven and immediately sprinkle with chopped parsley and fresh black pepper to taste.
  8. Serve immediately while hot, allowing your guests to enjoy the delicious aroma and flavors.

Tips

  • 💡 For an extra twist, try adding a few drops of hot sauce to the bacon mixture before spooning it over the oysters.
  • 💡 Ensure you use fresh oysters for the best flavor and quality. Look for oysters that are tightly closed or will close when tapped.
  • 💡 If you prefer a smokier flavor, try using smoked bacon instead of regular bacon.
