A beloved local gem from the heartland of America, Ozark Mountain Oysters are a testament to the resourcefulness and culinary creativity of our forebears. These 'oysters' are actually bull testicles, prepared with care to be crispy on the outside and tender on the inside. Paired with a zesty cocktail sauce, these golden bites offer an adventurous and unforgettable flavor journey.

Servings: 4

Ingredients

Cocktail sauce
1 cup
Vegetable oil
enough for deep frying
Salt
1 teaspoon or to taste
Black pepper
1/2 teaspoon or to taste
Cornmeal
1 cup
All-purpose flour
1 cup
Hot sauce
1 tablespoon
Buttermilk
2 cups
Bull testicles
2, cleaned and peeled

Instructions

  1. Clean and peel the bull testicles. Slice them into 1/4 inch thick rounds.
  2. In a medium-sized bowl, combine the buttermilk and hot sauce. Add the slices and ensure they are fully submerged. Let them marinate for at least 2 hours in the refrigerator.
  3. In another bowl, combine the flour, cornmeal, salt, and pepper. Mix well.
  4. Heat the oil in a deep fryer or large pot to 375°F.
  5. Remove the marinated slices from the buttermilk, allowing the excess to drip off. Dredge each slice in the flour mixture, ensuring they are well-coated. Shake off any excess.
  6. Fry the slices in the hot oil until they turn a deep golden brown, which should take about 3 minutes. Be careful not to overcrowd the pot.
  7. Use a slotted spoon to remove the fried slices and drain them on paper towels.
  8. Serve the Ozark Mountain Oysters hot, accompanied by the cocktail sauce for dipping.
