- 2 tablespoons Unsalted butter
- 2 cloves, minced Garlic
- 2 cups, chopped Fresh spinach
- 1/4 cup Heavy cream

- 1/2 cup, grated (divided) Parmesan cheese
- 1/4 cup Breadcrumbs

Instructions
- Preheat your oven to 450°F (230°C).
- Carefully shuck the oysters, ensuring they remain on their half shells. Place them on a baking sheet, making sure they are stable.
- In a skillet over medium heat, melt the unsalted butter. Add the minced garlic and sauté until fragrant, about 1 minute.
- Stir in the chopped spinach and cook until wilted, approximately 2-3 minutes.
- Pour in the Pernod and heavy cream, then mix in half of the grated Parmesan cheese. Season with salt and pepper to taste. Continue to cook until the mixture thickens slightly, about 3-4 minutes.
- Generously spoon the spinach mixture onto each oyster. Top with the remaining Parmesan cheese and sprinkle breadcrumbs over each for a crispy finish.
