Rice
2 cups, cooked
Scallions
4, chopped
Snow peas
1 cup, trimmed
Broccoli
1 cup, florets
Carrot
1 large, thinly sliced
Green bell pepper
1, thinly sliced
Red bell pepper
1, thinly sliced
Ginger
1 tablespoon, minced
Garlic
3 cloves, minced
Sesame oil
2 tablespoons
Soy sauce
1/4 cup
Tofu
1 block, cubed

Instructions

  1. In a bowl, marinate the tofu in soy sauce for at least 10 minutes, this allows the tofu to absorb the savory flavor of the soy.
  2. Heat the sesame oil in a wok or large pan over medium-high heat, ensuring the oil is hot but not smoking.
  3. Add the minced garlic and ginger to the pan and stir-fry for about 1 minute until they release their aromatic fragrance.
  4. Add the marinated tofu to the pan and stir-fry until all sides are golden brown, about 5 minutes. Remove the tofu and set it aside.
  5. In the same pan, add the bell peppers, carrot, broccoli, and snow peas. Stir-fry the vegetables until they are tender-crisp, about 5 minutes. This ensures the vegetables retain their vibrant colors and crunch.
  6. Return the tofu to the pan and add the chopped scallions. Give everything a quick stir-fry for another 2 minutes to merge the flavors.
  7. Serve the stir-fry over hot, fluffy cooked rice and enjoy the vibrant flavors of the Pacific Rim.
