Servings: 4
Ingredients
- Rice
- 2 cups, cooked
- Scallions
- 4, chopped
- Snow peas
- 1 cup, trimmed
- Broccoli
- 1 cup, florets
- Carrot
- 1 large, thinly sliced
- Green bell pepper
- 1, thinly sliced
- Red bell pepper
- 1, thinly sliced
- Ginger
- 1 tablespoon, minced
- Garlic
- 3 cloves, minced
- Sesame oil
- 2 tablespoons
- Soy sauce
- 1/4 cup
- Tofu
- 1 block, cubed
Instructions
- In a bowl, marinate the tofu in soy sauce for at least 10 minutes, this allows the tofu to absorb the savory flavor of the soy.
- Heat the sesame oil in a wok or large pan over medium-high heat, ensuring the oil is hot but not smoking.
- Add the minced garlic and ginger to the pan and stir-fry for about 1 minute until they release their aromatic fragrance.
- Add the marinated tofu to the pan and stir-fry until all sides are golden brown, about 5 minutes. Remove the tofu and set it aside.
- In the same pan, add the bell peppers, carrot, broccoli, and snow peas. Stir-fry the vegetables until they are tender-crisp, about 5 minutes. This ensures the vegetables retain their vibrant colors and crunch.
- Return the tofu to the pan and add the chopped scallions. Give everything a quick stir-fry for another 2 minutes to merge the flavors.
- Serve the stir-fry over hot, fluffy cooked rice and enjoy the vibrant flavors of the Pacific Rim.
