- 1 medium, chopped Onion
- 3 cloves, minced Garlic
- 1, diced Red bell pepper
- 2 medium, chopped Tomatoes
- 1 cup White wine
- 4 cups Fish stock
- 1 pound, cleaned and prepared Mixed seafood (mussels, shrimp, and fish)
- 1/4 cup, chopped Fresh parsley
- to taste Salt
- to taste Black pepper

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, minced garlic, and diced red bell pepper. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.
- Stir in the chopped tomatoes and continue to cook for an additional 5 minutes until they begin to break down and release their juices.
- Pour in the white wine and allow it to simmer, reducing by half, which should take about 3-4 minutes.
- Add the fish stock to the pot and bring the mixture to a boil.
- Once boiling, add the mixed seafood. Reduce the heat to low and let it simmer gently for 20 minutes, allowing the flavors to meld and the seafood to cook through.
- Season with salt and pepper to taste.
- Just before serving, stir in the chopped parsley for a fresh finish.
