Mango Lime Paletas

Ingredients
- Ripe mangoes
- 2 large, peeled and diced
- Lime juice
- 1/4 cup, freshly squeezed
- Honey
- 1/3 cup (or to taste)
- Water
- 1/2 cup
Instructions
- Start by peeling and dicing the ripe mangoes into small pieces.
- In a blender, combine the diced mangoes, freshly squeezed lime juice, honey, and water.
- Blend the mixture on high speed until it is smooth and well combined, ensuring there are no chunks of mango left.
- Taste the mixture and adjust sweetness with additional honey if desired.
- Pour the mango-lime mixture into popsicle molds, leaving a little space at the top for expansion.
- Carefully insert popsicle sticks into the molds, making sure they are centered.
- Place the molds in the freezer and allow them to freeze for at least 4 hours, or until completely solid.
- Once frozen, to remove the paletas from the molds, run warm water over the outside of the molds for a few seconds until they release easily.
