Instructions
- Remove the blade steaks from the refrigerator and let them come to room temperature for about 30 minutes. This ensures even cooking.
- Generously season both sides of the steaks with salt and black pepper.
- In a large skillet, heat the olive oil over medium-high heat until shimmering.
- Carefully add the seasoned steaks to the skillet and sear for 4-5 minutes on each side, or until they are browned and reach your desired level of doneness (130°F for medium-rare).
- Once cooked, remove the steaks from the skillet and let them rest on a plate for about 5 minutes. This allows the juices to redistribute.
- In the same skillet, lower the heat to medium and add the unsalted butter, minced garlic, and chopped thyme. Cook for 1-2 minutes, stirring frequently, until the garlic is fragrant and the butter is melted.
- Spoon the garlic herb butter over the rested steaks and serve immediately, garnished with additional thyme if desired.
Tips
- For a different flavor profile, try adding a splash of red wine or balsamic vinegar to the skillet after removing the steaks to create a quick pan sauce.
- Pair this dish with roasted vegetables or a fresh salad for a complete meal.
