Ingredients

Original recipe serves 4

Vanilla extract
1 teaspoon
Unsalted butter
2 tablespoons, melted, plus extra for greasing
Egg
1 large
Milk
1 cup
Salt
1/4 teaspoon
Baking powder
2 teaspoons
Granulated sugar
1 tablespoon
All-purpose flour
1 cup

Instructions

  1. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the large bowl with the dry ingredients. Stir gently until the mixture is just combined, taking care not to overmix. A few lumps are fine and will help keep your pancakes fluffy.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a dab of butter.
  5. For each pancake, pour 1/4 cup of batter onto the heated skillet. Allow the pancake to cook until bubbles form on the surface, approximately 2-3 minutes.
  6. Flip the pancake using a spatula, and cook for another 1-2 minutes, or until the underside is golden brown.
  7. Repeat with the remaining batter, greasing the skillet as needed. Tip: To keep pancakes warm while you cook the rest, set them on a baking sheet in a 200°F (95°C) oven.
  8. Serve your fluffy pancakes warm with your choice of toppings. Maple syrup, fresh berries, and whipped cream are classic choices.
