Servings: 4
Ingredients
- Vanilla extract
- 1 teaspoon
- Unsalted butter
- 2 tablespoons, melted, plus extra for greasing
- Egg
- 1 large
- Milk
- 1 cup
- Salt
- 1/4 teaspoon
- Baking powder
- 2 teaspoons
- Granulated sugar
- 1 tablespoon
- All-purpose flour
- 1 cup
Instructions
- In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the large bowl with the dry ingredients. Stir gently until the mixture is just combined, taking care not to overmix. A few lumps are fine and will help keep your pancakes fluffy.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a dab of butter.
- For each pancake, pour 1/4 cup of batter onto the heated skillet. Allow the pancake to cook until bubbles form on the surface, approximately 2-3 minutes.
- Flip the pancake using a spatula, and cook for another 1-2 minutes, or until the underside is golden brown.
- Repeat with the remaining batter, greasing the skillet as needed. Tip: To keep pancakes warm while you cook the rest, set them on a baking sheet in a 200°F (95°C) oven.
- Serve your fluffy pancakes warm with your choice of toppings. Maple syrup, fresh berries, and whipped cream are classic choices.
