Ingredients
- All-purpose flour
- 1 cup
- Baking powder
- 2 teaspoons
- Granulated sugar
- 2 tablespoons
- Salt
- 1/4 teaspoon
- Milk
- 1 cup
- Eggs
- 2, beaten
- Unsalted butter
- 2 tablespoons, melted
- Maple syrup
- for serving
Instructions
- In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
- In a separate bowl, mix the beaten eggs, milk, and melted butter until smooth.
- Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Heat a lightly greased griddle or frying pan over medium-high heat. Test the heat by sprinkling a few drops of water on the surface; if they dance and evaporate, it's ready.
- Pour or scoop approximately 1/4 cup of batter onto the hot griddle for each pancake.
- Cook until bubbles form on the surface and the edges appear dry, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.
- Remove the pancakes from the griddle and keep warm. Repeat the process with the remaining batter.
- Serve the pancakes hot, drizzled generously with pure maple syrup.
Tips
- For an extra touch, add blueberries, chocolate chips, or sliced bananas to the batter before cooking.
- If you prefer thicker pancakes, reduce the milk slightly or add an extra tablespoon of flour.
- To keep pancakes warm while cooking the rest of the batch, place them on a baking sheet in a low oven (around 200°F or 93°C).
