Pani Puri

Ingredients
- 4 cups Water
- 1 teaspoon Salt
- 1 teaspoon Chaat masala
- 1/2 teaspoon Black salt
- 1 teaspoon Cumin powder
- 2 tablespoons Tamarind pulp
- 1-inch piece, peeled and chopped Ginger
- 2, chopped (adjust to taste) Green chilies
- 1/2 cup, chopped Coriander leaves
- 1/2 cup, chopped Mint leaves
- 1 cup, boiled Chickpeas
- 2 medium, boiled and mashed Potatoes
- 20-25, store-bought or homemade Puris
- 1/2 cup (for serving) Tamarind chutney

Instructions
- To prepare the pani (flavored water), combine mint leaves, coriander leaves, green chilies, ginger, tamarind pulp, cumin powder, black salt, chaat masala, and salt in a blender. Add 2 cups of water and blend until smooth. Taste and adjust seasoning if needed. Set aside.
- In a mixing bowl, combine the mashed potatoes, boiled chickpeas, cumin powder, chaat masala, and salt. Mix thoroughly until well combined to create the filling.
- Take a puri and gently make a small hole on top using your thumb. Be careful to avoid breaking the puri.
- Fill the puri with a spoonful of the potato-chickpea filling. Ensure not to overfill to prevent bursting.
- Dip the filled puri into the prepared pani, making sure it gets fully immersed for the best flavor experience.
- Place the pani puri on a serving plate and garnish with additional tamarind chutney, if desired.
- Repeat the process with the remaining puris and filling.
- Serve immediately to enjoy the crunch and freshness of the pani puri.
