Thai-inspired Papaya Salad with Salted Egg

Ingredients
- Cilantro
- 1/4 cup, chopped
- Roasted peanuts
- 1/4 cup, crushed
- Sugar
- 2 tablespoons
- Fish sauce
- 2 tablespoons
- Lime juice
- 3 tablespoons
- Salted egg
- 1, sliced
- Chili peppers
- 2, sliced
- Tomatoes
- 2 medium, sliced
- Green papaya
- 1 small, peeled and shredded
Instructions
- Prepare your green papaya by peeling it, removing the seeds, and shredding it into thin strips. Place in a large bowl.
- Add the sliced tomatoes and chili peppers to the bowl with the papaya.
- To make the dressing, in a separate small bowl, whisk together the lime juice, fish sauce, and sugar. Stir until the sugar is fully dissolved.
- Pour the dressing over the papaya mixture. Toss the salad until everything is well coated with the dressing.
- Gently fold in the slices of salted egg, ensuring they're spread evenly throughout the salad.
- Finish the salad by sprinkling with the crushed roasted peanuts and chopped cilantro.
- Serve the salad immediately. This salad is best enjoyed fresh, as the papaya can release water over time.
