Ingredients

Cilantro
1/4 cup, chopped
Roasted peanuts
1/4 cup, crushed
Sugar
2 tablespoons
Fish sauce
2 tablespoons
Lime juice
3 tablespoons
Salted egg
1, sliced
Chili peppers
2, sliced
Tomatoes
2 medium, sliced
Green papaya
1 small, peeled and shredded

Instructions

  1. Prepare your green papaya by peeling it, removing the seeds, and shredding it into thin strips. Place in a large bowl.
  2. Add the sliced tomatoes and chili peppers to the bowl with the papaya.
  3. To make the dressing, in a separate small bowl, whisk together the lime juice, fish sauce, and sugar. Stir until the sugar is fully dissolved.
  4. Pour the dressing over the papaya mixture. Toss the salad until everything is well coated with the dressing.
  5. Gently fold in the slices of salted egg, ensuring they're spread evenly throughout the salad.
  6. Finish the salad by sprinkling with the crushed roasted peanuts and chopped cilantro.
