Ingredients

Original recipe serves 4

Cod fillets
4 (6-ounce each)
Parmesan cheese
1 cup, grated
Breadcrumbs
1/2 cup
Garlic powder
1 teaspoon
Salt
1/2 teaspoon
Black pepper
1/2 teaspoon
Butter
4 tablespoons
Lemon juice
2 tablespoons, freshly squeezed
Fresh parsley
2 tablespoons, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper. Mix well to ensure an even distribution of flavors.
  3. Pat the cod fillets dry with paper towels to remove any excess moisture. This will help the crust adhere better.
  4. Dip each cod fillet into the Parmesan mixture, pressing gently to ensure the coating sticks evenly on all sides.
  5. Place the coated cod fillets on a baking sheet lined with parchment paper to prevent sticking.
  6. Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and the crust is golden brown and crispy.
  7. While the cod is baking, melt the butter in a small saucepan over low heat. Once melted, add the freshly squeezed lemon juice and stir until well combined. Remove from heat and set aside.
  8. Once the cod is done baking, remove it from the oven and drizzle with the lemon butter sauce.
  9. Garnish with freshly chopped parsley for a pop of color and serve hot.

Tips

  • 💡 For a spicier kick, add a pinch of red pepper flakes to the breadcrumb mixture.
  • 💡 Pair this dish with a side of steamed asparagus or a light arugula salad to balance the richness of the butter sauce.
  • 💡 You can substitute cod with other firm white fish like haddock or tilapia if desired.
