Instructions
- Preheat the oven to 400°F (200°C).
- In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper. Mix well to ensure an even distribution of flavors.
- Pat the cod fillets dry with paper towels to remove any excess moisture. This will help the crust adhere better.
- Dip each cod fillet into the Parmesan mixture, pressing gently to ensure the coating sticks evenly on all sides.
- Place the coated cod fillets on a baking sheet lined with parchment paper to prevent sticking.
- Bake in the preheated oven for 15-20 minutes, or until the cod is cooked through and the crust is golden brown and crispy.
- While the cod is baking, melt the butter in a small saucepan over low heat. Once melted, add the freshly squeezed lemon juice and stir until well combined. Remove from heat and set aside.
- Once the cod is done baking, remove it from the oven and drizzle with the lemon butter sauce.
- Garnish with freshly chopped parsley for a pop of color and serve hot.
Tips
- For a spicier kick, add a pinch of red pepper flakes to the breadcrumb mixture.
- Pair this dish with a side of steamed asparagus or a light arugula salad to balance the richness of the butter sauce.
- You can substitute cod with other firm white fish like haddock or tilapia if desired.
