Salmon fillets
4 (6 oz each)
Olive oil
3 tablespoons, plus more for drizzling
Salt
1 teaspoon, divided
Black pepper
1/2 teaspoon, freshly ground
Garlic powder
1 teaspoon
Fresh parsley
2 tablespoons, finely chopped
Breadcrumbs
1 cup, preferably panko for extra crunch
Parmesan cheese
1 cup, freshly grated
Lemon wedges
for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, chopped parsley, garlic powder, 1/2 teaspoon of salt, and black pepper. Mix until well combined.
