- Extra firm tofu
- 14 ounces, pressed and cut into slices or cubes
- Olive oil
- 2 tablespoons
- Egg
- 1, beaten
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Dried oregano
- 1 teaspoon
- Garlic powder
- 1 teaspoon
- Bread crumbs
- 1 cup, preferably whole wheat
- Parmesan cheese
- 1/2 cup, grated
- Fresh parsley
- 2 tablespoons, chopped (optional, for garnish)
- Lemon wedges

Instructions
- Preheat the oven to 400°F (200°C).
- Press the extra firm tofu to remove excess moisture, then cut it into slices or cubes according to your preference.
- In a shallow bowl, combine the grated Parmesan cheese, bread crumbs, garlic powder, dried oregano, salt, and black pepper.
- In another bowl, beat the egg and set aside.
- Dip each piece of tofu into the beaten egg, allowing any excess to drip off. Then coat it thoroughly with the Parmesan mixture, pressing gently to ensure it adheres well.
- Heat the olive oil in a skillet over medium heat. Once hot, add the coated tofu pieces to the skillet and cook until golden brown and crispy, about 2-3 minutes per side.
- Transfer the browned tofu to a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes, or until the tofu is crispy and golden, flipping halfway through for even cooking.
- Remove from the oven and let cool slightly. Garnish with chopped fresh parsley if desired.
