Baby potatoes
1.5 pounds, washed and dried
Olive oil
2 tablespoons
Parmesan cheese
1/2 cup, finely grated
Garlic powder
1 teaspoon
Dried rosemary
1 teaspoon
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, freshly ground

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy clean-up.
  2. In a large mixing bowl, combine the olive oil, grated Parmesan cheese, garlic powder, dried rosemary, salt, and freshly ground black pepper.
  3. Add the washed and dried baby potatoes to the bowl. Toss until the potatoes are evenly coated with the Parmesan-herb mixture.
  4. Arrange the coated potatoes in a single layer on the prepared baking sheet, ensuring they aren’t touching to allow for even roasting.
