Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
- Slice the halved and seeded delicata squash into even 1/2-inch thick rings.
- In a large bowl, combine the olive oil, finely grated Parmesan cheese, dried thyme, garlic powder, salt, and pepper.
- Add the squash rings to the bowl and toss until each ring is thoroughly coated with the Parmesan and herb mixture.
- Arrange the coated squash rings in a single layer on the prepared baking sheet, ensuring they do not overlap.
- Roast in the preheated oven for 20-25 minutes, or until the squash is tender and the Parmesan forms a golden crust. You may broil for the last minute or two for extra crispiness but watch closely to avoid burning.
- Remove from oven and allow to cool for a few minutes before serving. Serve hot as a side dish to your favorite main course.
Tips
- For a vegan variation, replace the Parmesan cheese with nutritional yeast or vegan cheese of your choice.
- The skin of the delicata squash softens in the oven and is perfectly edible, adding extra fiber and texture to the dish.
- For an extra kick, add a pinch of crushed red pepper flakes to the mix.
