Delicata squash
2 medium-sized, halved and seeded

Instructions

  2. Slice the halved and seeded delicata squash into even 1/2-inch thick rings.
  3. In a large bowl, combine the olive oil, finely grated Parmesan cheese, dried thyme, garlic powder, salt, and pepper.
  4. Add the squash rings to the bowl and toss until each ring is thoroughly coated with the Parmesan and herb mixture.
  5. Arrange the coated squash rings in a single layer on the prepared baking sheet, ensuring they do not overlap.
