Creamy Parsnip and Apple Puree

Ingredients

Parsnips
2 cups, peeled and chopped
Apples
2 cups, peeled, cored, and chopped (preferably granny smith for tartness)
Milk
1/2 cup
Unsalted butter
2 tablespoons
Salt
1/2 teaspoon (to taste)
Black pepper
1/4 teaspoon (to taste)
Nutmeg
1/4 teaspoon (freshly grated for best flavor)

Instructions

  1. In a large pot, bring water to a boil. Add the chopped parsnips and cook until tender, about 10 minutes. Drain well and set aside.
  2. In a separate pot, add the chopped apples and enough water to cover them. Cook until the apples are soft, about 5 minutes. Drain well and set aside.
  3. In a food processor or blender, combine the cooked parsnips, cooked apples, butter, milk, salt, black pepper, and nutmeg. Blend until smooth and creamy, scraping down the sides as needed.
  4. Taste the puree and adjust seasoning if needed, adding more salt or pepper to your liking.
  5. Serve the parsnip and apple puree warm as a side dish to your favorite roasted meats or poultry, or enjoy it as a unique spread.
