Parsnip and Bacon Carbonara

This creamy and flavorful parsnip and bacon carbonara is a twist on the classic Italian pasta dish.

Ingredients

  • Fresh parsley (2 tablespoons, chopped)
  • Salt and pepper (to taste)
  • Garlic (2 cloves, minced)
  • Parmesan cheese (1 cup, grated)
  • Eggs (2 large)
  • Spaghetti (12 ounces)
  • Bacon (8 slices, chopped)
  • Parsnips (4 medium, peeled and thinly sliced)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and set aside.
  2. In the same skillet, add the sliced parsnips and minced garlic. Cook until the parsnips are tender and lightly browned, about 8-10 minutes. Remove from heat and set aside.
  3. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and pepper.
  5. Return the skillet with the parsnips and garlic to low heat. Add the cooked spaghetti and bacon to the skillet and toss to combine.
  6. Pour the egg and cheese mixture over the pasta and quickly toss to coat. The heat from the pasta will cook the eggs and create a creamy sauce.
  7. Remove from heat and garnish with chopped fresh parsley.
  8. Serve immediately and enjoy!
