Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced onions to the skillet and cook, stirring occasionally, until they are caramelized and golden brown, about 15 minutes.
- Stir in the grated parsnips and continue cooking for another 10 minutes, until the parsnips are tender and well mixed with the onions.
- Next, add the brown sugar, apple cider vinegar, ground cinnamon, ground nutmeg, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
- Reduce the heat to low and let the mixture simmer for 30-40 minutes. Stir occasionally to prevent sticking, until the jam thickens and reaches a spreadable consistency.
- Once thickened, remove the skillet from heat and allow the jam to cool completely.
- Transfer the cooled jam to a clean jar or container and store in the refrigerator for up to 2 weeks.
- Serve the parsnip and onion jam as a condiment with cheese boards, crackers, sandwiches, or alongside roasted meats for a burst of flavor.
Tips
- For added depth of flavor, consider adding a splash of balsamic vinegar instead of apple cider vinegar.
- Try mixing in some fresh herbs, such as thyme or rosemary, during the last few minutes of cooking for an aromatic twist.
- This jam can also be used as a glaze for roasted vegetables or meats, enhancing the overall flavor.
