Egg

Baking powder

Parsnips
2 medium, grated (about 1 1/2 cups)

Instructions

  1. In a large mixing bowl, combine the grated parsnips, sweet corn kernels, all-purpose flour, baking powder, beaten egg, milk, chopped green onions, salt, and black pepper. Stir until all ingredients are well incorporated and form a thick batter.
  2. Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until hot. You can test if the oil is ready by dropping a small amount of batter into the oil; if it sizzles, it’s ready.
  3. Using a 1/4 cup measuring scoop, drop the fritter mixture into the hot oil, spacing them out to avoid overcrowding. Gently flatten each fritter with a spatula to ensure even cooking.
  4. Cook the fritters for approximately 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
  5. Once cooked, remove the fritters from the pan and place them on a paper towel-lined plate to absorb any excess oil.
