
Parsnip and Sweet Corn Fritters
These parsnip and sweet corn fritters are crispy on the outside and tender on the inside, packed with flavor and perfect as a side dish or appetizer.
Ingredients
- Vegetable oil (2 tablespoons)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Green onions (2, finely chopped)
- Milk (1/4 cup)
- Egg (1, beaten)
- Baking powder (1 teaspoon)
- All (purpose flour - 1/2 cup)
- Sweet corn kernels (1 cup)
- Parsnips (2 medium, grated)
Instructions
- In a large bowl, combine the grated parsnips, sweet corn kernels, all-purpose flour, baking powder, beaten egg, milk, green onions, salt, and black pepper. Mix well until all ingredients are evenly combined.
- Heat the vegetable oil in a frying pan over medium heat.
- Scoop about 1/4 cup of the fritter mixture and drop it into the hot oil. Flatten it slightly with a spatula. Repeat with the remaining mixture, leaving some space between each fritter.
- Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and place them on a paper towel-lined plate to absorb any excess oil.
- Serve the parsnip and sweet corn fritters warm as a side dish or appetizer. They can be enjoyed on their own or with a dipping sauce of your choice.
