Instructions
- In a large mixing bowl, combine the grated parsnips, sweet corn kernels, all-purpose flour, baking powder, beaten egg, milk, chopped green onions, salt, and black pepper. Stir until all ingredients are well incorporated and form a thick batter.
- Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until hot. You can test if the oil is ready by dropping a small amount of batter into the oil; if it sizzles, it’s ready.
- Using a 1/4 cup measuring scoop, drop the fritter mixture into the hot oil, spacing them out to avoid overcrowding. Gently flatten each fritter with a spatula to ensure even cooking.
- Cook the fritters for approximately 3-4 minutes on each side, or until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Once cooked, remove the fritters from the pan and place them on a paper towel-lined plate to absorb any excess oil.
