Cottage cheese
2 cups
Butter
1/2 cup, softened
Powdered sugar
1 cup
Vanilla extract
1 teaspoon
Lemon zest
1 tablespoon
Dried fruits (raisins, currants, chopped apricots)
1 cup
Mixed nuts (almonds, walnuts, pistachios)
1/2 cup, chopped
Candied fruit (cherries, orange peel)
1/2 cup
Egg yolks
3
Heavy cream
1/2 cup
Decorative candies or sprinkles
for garnish

Instructions

  1. In a large bowl, mix together the cottage cheese, softened butter, powdered sugar, vanilla extract, and lemon zest until smooth.
  2. Add the dried fruits, mixed nuts, and candied fruit to the cottage cheese mixture. Stir until the fruits and nuts are evenly distributed.
  3. In a separate bowl, beat the egg yolks until they turn creamy. Gradually add the heavy cream to the egg yolks, continuing to beat until well combined.
  4. Fold the egg yolk and cream mixture into the cottage cheese mixture, stirring until thoroughly incorporated.
  5. Line a pasha mold or a small bowl with cheesecloth. Transfer the dessert mixture into the mold, pressing it down gently to ensure it takes the shape of the mold.
  6. Fold the excess cheesecloth over the top of the mixture. Place a weight on top to compress the pasha. Refrigerate it for at least 6 hours, or ideally, overnight.
  7. To serve, remove the pasha from the refrigerator and carefully take it out of the mold. Unwrap the cheesecloth and place the pasha on a serving plate.
  8. Garnish the pasha with decorative candies or sprinkles. Slice and serve this creamy, delicious dessert as the perfect ending to your Easter meal.
