Pasha
Pasha, a decadent Russian Easter dessert, carries a rich tradition of celebrating the joyous festival. Ingredients
- 2 cups Cottage cheese
- 1/2 cup, softened Butter
- 1 cup Powdered sugar

- 1 cup Dried fruits (raisins, currants, chopped apricots)
- 1/2 cup, chopped Mixed nuts (almonds, walnuts, pistachios)
- 1/2 cup Candied fruit (cherries, orange peel)
- 3 Egg yolks
- 1/2 cup Heavy cream
- For garnish Decorative candies or sprinkles

Instructions
- In a large bowl, mix together the cottage cheese, softened butter, powdered sugar, vanilla extract, and lemon zest until smooth.
- Add the dried fruits, mixed nuts, and candied fruit to the cottage cheese mixture. Stir until the fruits and nuts are evenly distributed.
- In a separate bowl, beat the egg yolks until they turn creamy. Gradually add the heavy cream to the egg yolks, continuing to beat until well combined.
- Fold the egg yolk and cream mixture into the cottage cheese mixture, stirring until thoroughly incorporated.
- Line a pasha mold or a small bowl with cheesecloth. Transfer the dessert mixture into the mold, pressing it down gently to ensure it takes the shape of the mold.
- Fold the excess cheesecloth over the top of the mixture. Place a weight on top to compress the pasha. Refrigerate it for at least 6 hours, or ideally, overnight.
- To serve, remove the pasha from the refrigerator and carefully take it out of the mold. Unwrap the cheesecloth and place the pasha on a serving plate.
- Garnish the pasha with decorative candies or sprinkles. Slice and serve this creamy, delicious dessert as the perfect ending to your Easter meal.
Tips
- For a variation, you can add a touch of rum or brandy to the cottage cheese mixture for an adult version.
