  • Large mushrooms (12, stems removed)
  • Olive oil (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Pastrami (1 cup, diced)
  • Blue cheese (4 ounces, crumbled)
  • Salt (to taste)
  • Black pepper (to taste)
  • Parmesan cheese (2 tablespoons, grated (optional, for topping))

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Carefully remove the stems from the mushrooms and finely chop them. Set the caps aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems and minced garlic, cooking until softened, about 3-4 minutes.
  4. Remove the skillet from heat and stir in the diced pastrami and crumbled blue cheese. Season generously with salt and black pepper to taste, mixing thoroughly to combine.
  5. Using a spoon, stuff each mushroom cap generously with the pastrami and blue cheese mixture.
  6. Arrange the stuffed mushrooms on a baking sheet. If desired, sprinkle grated Parmesan cheese on top for an extra layer of flavor.
