- 12, stems removed Large mushrooms
- 2 tablespoons Olive oil
- 2 cloves, minced Garlic
- 1 cup, diced Pastrami
- 4 ounces, crumbled Blue cheese

- 2 tablespoons, grated (optional, for topping) Parmesan cheese

Instructions
- Preheat your oven to 375°F (190°C).
- Carefully remove the stems from the mushrooms and finely chop them. Set the caps aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped mushroom stems and minced garlic, cooking until softened, about 3-4 minutes.
- Remove the skillet from heat and stir in the diced pastrami and crumbled blue cheese. Season generously with salt and black pepper to taste, mixing thoroughly to combine.
- Using a spoon, stuff each mushroom cap generously with the pastrami and blue cheese mixture.
