Ingredients

Bell peppers
4 large, halved and seeds removed
Pastrami
8 ounces, chopped
Cheddar cheese
1 cup, shredded
Olive oil
2 tablespoons
Onion
1 medium, diced
Garlic
2 cloves, minced
Salt
to taste
Pepper
to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  3. Stir in the chopped pastrami and cook for an additional 3-5 minutes until heated through, allowing the flavors to meld.
  4. Remove the skillet from the heat and fold in the shredded cheddar cheese until well combined. Season the mixture with salt and pepper to taste.
  5. Carefully stuff each bell pepper half with the pastrami and cheese mixture, pressing down gently to pack it in.
  6. Arrange the stuffed peppers upright in a baking dish. Cover the dish with aluminum foil to retain moisture.
  7. Bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
