Pastrami
1 pound, sliced
Slider buns
12, lightly toasted
Green cabbage
2 cups, shredded
Red cabbage
1 cup, shredded
Carrots
1/2 cup, shredded
Mayonnaise
1/2 cup
Apple cider vinegar
2 tablespoons
Sugar
1 tablespoon
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Ground celery seed
1/2 teaspoon
Dill pickles
1/2 cup, sliced (optional)
Green onion
1/4 cup, sliced (optional)

Instructions

  1. In a large mixing bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, black pepper, and ground celery seed until the mixture is smooth and creamy.
  2. Add the green cabbage, red cabbage, shredded carrots, and optional green onion to the dressing and stir until thoroughly combined. Set aside for at least 10 minutes to allow the flavors to meld.
  3. Heat a large skillet over medium heat. Add the sliced pastrami to the skillet and cook for approximately 5 minutes, stirring occasionally, until heated through and slightly crispy at the edges.
  4. While the pastrami is heating, toast the slider buns lightly in a toaster or on a skillet until golden brown.
  5. Once the pastrami is ready, place a generous portion on the bottom half of each toasted bun.
  6. Top the warm pastrami with a heaping spoonful of the prepared coleslaw.
  7. For an extra burst of flavor, add sliced dill pickles on top of the coleslaw (optional).
  8. Cover each slider with the top half of the bun to complete the sliders.
  9. Serve immediately, or cover and refrigerate for up to an hour before serving to let the flavors develop further.
