Instructions
- In a large mixing bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until the mixture is smooth and creamy.
- Add the coleslaw mix to the dressing and stir until thoroughly combined. Set aside for at least 10 minutes to allow the flavors to meld.
- Heat a large skillet over medium heat. Add the sliced pastrami to the skillet and cook for approximately 5 minutes, stirring occasionally, until heated through and slightly crispy at the edges.
- While the pastrami is heating, slice the slider buns in half and arrange the bottom halves on a serving platter.
- Once the pastrami is ready, place a generous portion on the bottom half of each bun.
- Top the warm pastrami with a heaping spoonful of the prepared coleslaw.
- For an extra burst of flavor, add sliced dill pickles on top of the coleslaw (optional).
- Cover each slider with the top half of the bun to complete the sliders.
- Serve immediately, or cover and refrigerate for up to an hour before serving to let the flavors develop further.
Tips
- For a spicy kick, consider adding sliced jalapeños or a dash of hot sauce to the coleslaw.
- Feel free to experiment with different types of coleslaw mixes, such as adding shredded carrots or red cabbage for color and texture.
- These sliders can also be grilled for a smoky flavor – simply grill the assembled sliders over medium heat until the buns are toasted and the pastrami is hot.
