
Pastrami and Jalapeno Cornbread

Ingredients
- Jalapenos (2, seeded and chopped)
- Pastrami (1/2 cup, chopped)
- Butter (1/4 cup, melted)
- Eggs (2)
- Milk (1 cup)
- Salt (1/2 teaspoon)
- Baking powder (1 tablespoon)
- Sugar (1/4 cup)
- All (purpose flour - 1 cup)
- Cornmeal (1 cup)
Instructions
- Preheat your oven to 400°F (200°C) and grease a 9-inch round cake pan.
- In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, eggs, and melted butter.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Fold in the chopped pastrami and jalapenos.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cornbread to cool in the pan for 10 minutes before slicing and serving.
