Ingredients

Pastrami
6 ounces, sliced
Leeks
2 medium, cleaned and sliced
Pancake mix
2 cups
Milk
1 cup
Eggs
2 large
Butter
2 tablespoons (for cooking)
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Additional butter or oil
for greasing the pan

Instructions

  1. In a skillet over medium heat, add the sliced pastrami and cook until crispy, about 5-7 minutes. Transfer to a plate and set aside.
  2. In the same skillet, add the sliced leeks and sauté until softened and golden, about 4-5 minutes. Remove from heat and set aside with the pastrami.
  3. In a large mixing bowl, combine the pancake mix, milk, and eggs. Stir until the batter is smooth and lump-free.
  4. Gently fold in the crispy pastrami and sautéed leeks into the pancake batter. Season with salt and black pepper to taste.
  5. Heat 1 tablespoon of butter or oil in the skillet over medium heat. For each pancake, pour 1/4 cup of the batter into the pan.
  6. Cook the pancakes until golden brown on each side, about 2-3 minutes per side. Adjust the heat as necessary to prevent burning.
