Savory Pastrami and Leek Pancakes

Ingredients
- Pastrami
- 6 ounces, sliced
- Leeks
- 2 medium, cleaned and sliced
- Pancake mix
- 2 cups
- Milk
- 1 cup
- Eggs
- 2 large
- Butter
- 2 tablespoons (for cooking)
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Additional butter or oil
- for greasing the pan
Instructions
- In a skillet over medium heat, add the sliced pastrami and cook until crispy, about 5-7 minutes. Transfer to a plate and set aside.
- In the same skillet, add the sliced leeks and sauté until softened and golden, about 4-5 minutes. Remove from heat and set aside with the pastrami.
- In a large mixing bowl, combine the pancake mix, milk, and eggs. Stir until the batter is smooth and lump-free.
- Gently fold in the crispy pastrami and sautéed leeks into the pancake batter. Season with salt and black pepper to taste.
- Heat 1 tablespoon of butter or oil in the skillet over medium heat. For each pancake, pour 1/4 cup of the batter into the pan.
- Cook the pancakes until golden brown on each side, about 2-3 minutes per side. Adjust the heat as necessary to prevent burning.
